Simple fresh asparagus


Asparagus is a spring vegetable that has a unique and beautiful flavour. Serve as a starter or as a side dish to a main course.

Cooking time: 5 minutes


A large bunch of Fresh green asparagus
A pinch of fleur de sel
Butter or vinaigrette

Preparation method

Steam the asparagus for 5 minutes or until they can be pierced with a fork. Be careful not to over-cook as mushy asparagus is not much fun. If you don’t have a steamer, then you can boil them in wide pan; but if you enjoy the taste of asparagus, then it is worth investing in a steamer.

The markets of Provence often sell white asparagus, which comes from the process of etiolation, which is the deprivation of light. The plant cannot produce chlorophyll without light, thus there is no green color to the stalks. White asparagus is considered to be slightly milder in flavour and a bit more tender than green asparagus and is often pickled.
